Co to jest HACCP? HACCP (Hazard Analysis Critical Control Point) – analiza zagrożeń i kontrola punktów krytycznych to system, który wskazuje miejsca potencjalnego zagrożenia, następnie kwalifikuje zagrożenie pod względem istotności i określa ryzyko jego wystąpienia. System HACCP identyfikuje i ocenia zagrożenia sanitarne i higieniczne związane z produkcją i dystrybucją produktów żywnościowych oraz określa metody ich ograniczania. HACCP jest najskuteczniejszym narzędziem gwarantującym, że żywność nie ulegnie skażeniu lub zanieczyszczeniu i będzie bezpieczna dla konsumenta. Kto powinien wdrożyć HACCP? Zgodnie z wymaganiami ustawy o bezpieczeństwie żywności i żywienia z dnia 28 października 2006r (Dz.U.2006 Nr 171 Poz.1225), każda firma będąca elementem „łańcucha żywnościowego” (od gospodarstwa do stołu konsumenta) zobowiązana jest do wdrożenia systemu HACCP.
